Tribute to KathEats

Oh.my.goodness, I got so excited about my AMAZING breaky that I had to do an immediate post! But let's get through the week first :)

Between Cat's boxing event and Thursday, uni happened. Sounds so daunting! But actually, uni has been great so far! I am really enjoying my classes and my professors... and it can be tough to like both. I already have assignments due this week, quizzes to study for and reports to get started on!

If you remember I lived in uni accommodation, Varsity Apartments, last semester. Had a great time but was ready to move to the beach :) Anyway, we still have some friends living there so we kicked off Uni Night at Varsity hanging out with old friends and meeting new ones

We had a great time - took the free bus to M'ba when Mags and I thought it would be a good idea to run home and grab a few things. Hmm not such a good idea... got DRENCHED as we sprinted in the storm home. HAH So we decided while we were there waiting for the rain to let up, we'd have a little dessert: Champagne! Not much, no worries... the rain only comes in 10 minute intervals ;)

Had a pretty good time at our first 2010 Uni Night but made the unanimous decision to just stay in M'ba next time instead of running back and forth... I guess we'll have to bring the party here! 

As you all know, I have been desperately trying to loose some Aussie-caused pounds. Things have been going great and Mags and I thought we deserved to be rewarded... Thank you Hog's Breath Cafe!!! Saturday night we indulged in warm mud pie, chocolate sauce and ice cream... well earned :D Side note: we split the one so, I mean, it barely counts. Wish the body thought so!
Hog's Breath would be the equivalent of Outback Steakhouse. But actually IN the Outback ;)

The remainder of the weekend consisted of some running around town and catching up with a few of my homegirls! Perfect perfect weekend! Last night I was doing a little blog searching and stumbled upon one I used to religiously read. Needless to say, I've been a little too preoccupied to blog read the past few months but Kath has always been one of my favorites. The thing I love the most is her oatmeal creations!!! Unfortunately Kath uses quite a few ingredients that I don't have readily available so I decided to take it to Quaker for further inspiration. I could think of a few add-ins that would be delish but took a look anyway. Quite the list!

Here we go.. my mix: 
1/2 cup Whole rolled oats, 1/2 cup milk, 1/4 cup water, light drizzle of maple syrup, small dollop of raspberry jam, blueberries and pretzels!
And it was soooo good! The 'pretzel' add-in was inspired by Quaker... lots of the recipes combined various fruits/sweets with bacon. For a healthier approach, while achieving the crunchy texture and salty taste, i figured why not pretzels?? And it was perfect :) The wheels have been churning all day for tomorrows breakfast!
But that's not all breakfast consisted of! I go through phases between tea and coffee. Normally it's coffee coffee then coffee headaches... eck. So then, like a rehab patient, ween off coffee, and drink lots of tea... Mmm but coffee is back in black! Well... not quite. Because coffee is so expensive Mags and I thought we would do some at home experiments. Last night = coffee, skim milk, 1 sugar-free sweetener, cinnamon and nutmeg YUMMY! It was Christmas in a cup! So... this morning was  coffee, skim milk, 1 sugar-free sweetener, cinnamon and ginger powder YUMMY #2 :D

colors and matte :) but yum, right?!

After breakfast, I skyped with Jordan Gleaton and got to hear all about her Spring Break 2010 CRUISE she just returned from - so jealous!!! I then did an hour of Zumba, vacuumed the house, rearranged my room, finished an assignment and finished my blog :) 

WARNING: Please pray for Cyclone Ului to stay away until AFTER next weekend - Mags and I are going sailing! News read:

  1. I don't know how this works with hot tea, but with cold tea if you add a few tablespoons of coffee to a glass of unsweetened tea, the entire glass tastes just like coffee. I imagine if you use hot tea and spike it with some coffee, you'd have the same effect and use less of that pricey coffee!
